Akershus Late Breakfast Into Lunch Hours

Are you hurried out if your breakfast ADR is 11:00am since the menu changes to lunch at 11:55am? Most character meals I've done were 75-90 minutes.

Will we need to fill up our plates before they switch to the lunch food? I'm thinking part of the food is buffet... but maybe it's all served family style?

Thanks! We like a big breakfast if skipping lunch!
 
They do waves of seating so you will probably be out sooner than other character meals. You go to the buffet basically for appetizers fruit, yogurt, bread, cheese, fish :), etc and then they will bring you a big platter of all the breakfast foods. It would be very unlikely that you would get to try the lunch foods the way they pace thing but you could go back to the buffet in theory. Your whole room will be breakfast eaters and then as they start seating for lunch they fill other rooms. The buffet changes will be more cheeses and some cold salads but it's not a huge switchover.
 
Yes, and yes, to your two questions.

I made breakfast reservations for the latest possible time, figuring it was a clever way to get to sample the lunch offerings as well on my way out the door (we were flying out that afternoon, so couldn't have a later ADR for lunch). Instead, by the time I got to the buffet (the princesses were sweeping through as we sat down), they were already wrapping up much of the breakfast selections, and were bringing in the lunch selections, but they were still all wrapped in plastic.

As has been mentioned, there is plenty of food brought to your table served family-style. But it's mostly the standard bacon and scrambled eggs you get at WDW, so I was really looking forward to exploring the buffet for Norwegian specialties.

Most surprising was the rush they were in to get us out of there. I'd say we were there less than 30 minutes in total, and they were definitely pressuring us to leave.

Unless you're going solely for a quick fix of bacon, eggs, and princesses, I'd recommend a different time if possible.
