AK on EMH Saturday Thanksgiving weekend

Sounds crazy doesn't it? LOL Going to AK on an EMH of Thanksgiving weekend!

Anyway we always avoid EMH parks but I am wondering if it would be possible to do an 8am emh here and NOT use FP and hit the Safari once, Everest a couple times and possibly Dinosaur too and then end with a late morning breakfast at Tusker house.
My thought was if I could do this then the late breakfast would give us seating for the nighttime show (assuming that happens and I can book it etc) and so we could leave the park late morning and hop to HS to use our FP in the afternoon followed by a break at the hotel and then back to AK for the evening show.
Maybe even doing dinner at Rainforest that evening when we show up. (Son loves it).
Just looking for any thoughts on this plan because my booking for ADR's is tomorrow morning and even though I can't book the AK show/meal thing yet I'd just like to know what the EMH crowds would be like at such a busy time to see if this might be an option.
