AK Lodge/Villas and Dining with Food Allergies?

We are a family with several life-threatening food allergies. In fact, I'm the only one of the five of us who does NOT have any food allergies. We've had great experiences dining at Disney in the past. However, most of our dining experiences have taken place in the parks.

We are in the process of buying DVC at Animal Kingdom Villas and hope to eat many meals there in the future.

I'm wondering if anyone has had experience with any of the chefs and dining with food allergies at any of the Animal Kingdom Lodge/Villas restaurants, mainly Boma and Mara?

As all of the locations at AKL are Disney owned and operated there should be no problems at all. And Boma has always had very high ratings as far as food allergies.
