Air fare timing

I plan on flying JFK to MCO round trip Feb16-26. The fare is much more than I usually spend (300.00 vs 120.00) I realize I am going at a peak time, but how can I know when it is the best deal I am going to get?

I know it's not any consolation, but I finally just gave in and bought the $*#(# tickets today. They were high; $346, but OTOH, the times were exactly what I was looking for. I'm just worried that with fuel prices going up, up, up, that the prices won't come down.

Does Southwest fly out of JFK? I just booked Southwest from PHL to MCO for Easter Sunday 3/27/05 for $79! It's only 1 way but it sure beats the $300-ish each way that USAir and Spirit were showing. Southwest is only booking through 4/1/05 and I'm planning to return on 4/3/05 so I'll just keeping checking their website every few days to see when they extend their booking dates.
