I am wondering which CS locations at the parks are indoors w/AC. I didn't really notice last time we went because it was November and beautiful outside. I remember that we ate outside at Cosmic Rays, Flame Tree and the Tillie's place at Typhoon Lagoon. We are considering an August trip, though, so I'm trying to think of indoor places to escape from the heat. Thanks!:)
 
More of the CS than not have indoor seating, though it is limited at a few places. Off the top of my head, I may have missed a few:

MK: Cosmic Ray's has a lot of indoor seating, Pinocchio's, Columbia Harbour, Pecos Bill's, Casey's seating is pretty limited indoors.

AK: Pizzafari has a pretty large indoor seating area, Tusker House, and Restaurantosaurus.

MGM: Backlot Express, Pizza Planet, and ABC Commissary.

Epcot: Seasons, Electric Umbrella, I believe Kringla Bakery in Norway has limited seating, Lotus Cafe or whatever it's called in China, Liberty Inn at American Adventure... I think I'm missing something here, someone else will chime in I'm sure.
 
JCEmom has a great list, just a note that Kringla does have seating, covered, but outside. Don't remember if the Japanese CS was on the list, but think it was air conditioned, or maybe just cool.:)
 
Our last trip was the first time we tried Cosmic Rays. It has ample indoor seating and we really enjoyed the show in the center (lower) portion of the seating, while we were eating. The menu offered more diversity tham most CS places as well since it had the 3 different counters.
 

Thought Pecos Bill's does have A/C they also leave the doors open and a lot of that cool air escapes while it welcomes the hot air in. When we eat there we walk to the right where you order your meals, you will see a ramp that leads to a different area. Its a lot cooler and quieter up there. Cosmic Ray's is our favorite because of Sonny Eclipse. Plus as we are finishing DD13 can run over and get in line for Indy.

Fountain View, if it's open. Boulangerie in France (very limited seating). Yakitori House in Japan (also limited)
 
EPCOT additional info:

The Lotus Blossom cafe seating is outdoors. It's under roof and shaded, but not enclosed with a/c (same thing at Kringla in Norway, the patisserie in France, and Somerwhatever in Germany).

Morocco c/s has limited indoor seating, but doors are often open. I think the Liberty Inn c/s in America has a lot of indoor seating (I've never eaten there, but walked through it once on the way to the bathroom). Teppanyaki CS in Japan has some indoor seating, with more outside.

MGM: ABC commissary has lots of indoor seating as does pizza planet. I didn't notice any indoor seating at the one by the Backlot Tour (I can't remember the name of it, but it's between the tour exit and the HISTK playground). It was covered, with fans though.

AK: Tusker House and Pizzafari. Flame Tree seating is all outside, again some is under shade.

MK: Tomorrowland terrace noodles has shaded outdoor seating as well (when it's open). Columbia Harbor House and Pinnochios both have indoor a/c.

The patisserie has seating in the shop nearby (the exit to the movie) that is all the way air conditioned, or at least to my memory.
