We added free dining to part of our Sept. trip. This is a 25th anniversary trip for my DH and me, but my parents (who live in FL) will be joining us for one or two days.
My question is- should I make all my ADR's for 4 people even though I won't know which days we'll be dining as 2 and which days we'll be a group of 4? I'm afraid if I book for 2, it will be more difficult to add in another couple later. I can always "lose" a couple at the last minute, right?

You are correct. Always book for the maximum amount of people possible. It's much easier to decrease your party size than it is to increase it. Book for four and then adjust later if you have to.
