ADRS!/Creative use of dining plan??

Hello,
I just made all my reservations for my trip to Disney World. It is my third trip but my boyfriend's first! I'm really trying hard to make everything very special...he's really excited! We've been together for four years and this is finally our first vacation together! He's a chef so I've really been working hard at trying to think of the best places to dine.

So anyways, here are my dining reservations.

1/27/08: Le Cellier 8pm
1/28/08: Chef's Table at Victoria and Albert's (!!!) 6pm
1/29/08: Garden View Tea at Grand Floridian 5pm
1/30/08: Princess Breakfast at Akershus 10am
2/1/08: Artist Point at Wilderness Lodge 7:30pm
2/2/08: California Grill at Contemporary 7:20pm

We chose the dining plan, but obviously V+A and Tea aren't on plan, so we'll pay out of pocket. With those two we have, we're dining at the signature restaurants. I had a hard time choosing between Jiko and Artist Point, but I prefer the setting of the WL over AKL. Two questions: will Akershus breakfast be corny for two adult lovebirds? What exactly is the breakfast like there?

Also, does anyone think I should actually NOT get the dining plan? I tried to do the math but got way too frustrated. We like the idea of the convenience of it. I used it in 2005 when it was much better and loved it but I know it's different now.

Oh, and I'm a really picky eater, so anyone been to Chef's Table that is also in my situation?

Are you doing the Deluxe Disney Dining Plan or the standard DDP?

The Deluxe has 3 meals a day, you decide how to use them (TS or CS), and 2 snacks a day. With your 2 TS credit meals this may be the better plan for you.

How about Jiko? This is another Signature dining place that has some great twists on old favorites.

1) I would think he could be critical, so a few caveats.
2) I would select the dining room at V&A, instead of the Chef's Table
. . . the Chef's Table is fenced off, so it is not a typical Chef's Table
. . . the service and food in the dining room is great
. . . chef's seem to want to see the food, but also the service
3) The Afternoon Tea is a nice touch.
. . . the selection of teas and food is pretty good
. . . some of the tea blends ar made solely for the GF
. . . however, they only have Pekoe, Orange Pekoe and Broken Orange Pekoe teas
. . . this may or may not matter, based upon his tea experience

NOTE: My favorite selection at the Afternoon Tea is the Grand Tea with the Darjeeling tea. The wife likes the Buckingham Palace package with the Oolong tea.
