Hello!
UPDATE : Booked two little mermaid rooms for our party. I think the kids will enjoy it. Thanks everyone for the caution!:-)

We are a party of 7 (4+3) looking to book a last minute room for one night this week. We have park tickets already and want to stay onsite for that night. The only available option is AoA but it has a capacity of 6 only. Can I book it for 6 but check in 7? We don’t need additional magic bands or keycards and don’t plan on using the early park access

Also any tips on scoring last minute deals, tried Priceline and Hotwire, they don’t have any Disney resort options. Thanks!

Room capacity is a strict 6 people + 1 under the age of 3. You cannot book 6 and check in 7 otherwise.

If all are 3 years of age and over, firm no - I would look at booking two value rooms.

If that is not available and you don't plan on using early park access, book a non-Disney hotel at Disney Springs or just outside of Disney property.

I know someone who stayed AoA with 7. They just didn't list one of the guests on the reservation. I don't know how they all fit for a week but they did it! I suggest booking 2 All Star rooms for the night. Many times that is a cheaper option, way more comfortable and you aren't over capacity.

Branch out and try for a Disney springs hotel for better availability. A number of off-site hotels qualify for the early entry benefit, you can Google the full list.
