We bought a non-expiration 10 day park hopper (used only 2 days on that visit) for our dd last May and bought 5 day non-expiring park hoppers for us this past Feb, which we haven't used yet! We are going back to WDW this fall & she has recently decided that she LIKES water parks. Can we still add the Water Park options and More to the passes we already have. I know we'd have to pay for a 10 day pass addition for her if we decided on that.
 
I don't think you can. I believe you have to do all upgrades within 14 days of use.

The only other option is to pay for a water park annual pass if you are planning a few days at the water parks. Otherwise just pay per day for a single admission. I think the waterpark annual pass was about $100.
 
As squirrel said, you can't upgrade the 10 day ticket that have 2 days used because of the 14 days of first use rule. However, you can upgrade your 5 day tickets because you haven't used them yet.
