Does anyone know if the DDP can be added a week before departure on the 7/4 deal? I would rather wait to pay for the dining, if that was possible. Also, are the cancellation policies different depending on whether you book on-line or on the phone?

For a package, the cancellation policies are the same no matter how you book. A room only cancellation policy changes to a package policy if you book online.
You may add dining up to 72 hours prior to check-in.
rt2dz answered perfectly just a simple correction, room only online is same cancellation policy as if you call UNLESS its a discounted room (passholder, AP, etc) then its 45 days

If I have this wrong, I definitely want to know, but are you sure? I took my information from All Ears, Mouse Savers, and The Unofficial Guide. I'm sure I can be wrong, but I find that weird considering my sources. Perhaps something has changed since I last checked (it has been awhile)...
Room only reservations, even when they were R bookings (res number started with an R) had the 5 day policy. Internet room only bookings are now 12 digit number just like a call in room only (for apprx. 4 months now) with the 5 day policy as well. If you go to disneyworld.com and price out a room only it will say 5 day unless its a discounted room ie: AP or FL resident (yes I realize now I said passholder, AP, which would be the same thing:])
Thanks for the info. I think I will add the dining a few days before we arrive, and this will give me a few more weeks to save, and still have almost everything paid for before we arrive!!!
The CM told me it has to be added 7 days before I arrive if I decide to add it.
I have decided not to bother, as we were not doing a lot of souvieners this time (we are cruising the week after, and I want to save my $$ for that), and I can use the $200 gc for food.
I also don't want to be tied down to a ton of reservations this time. Probably going to do more counter service and a couple of fave meals.
