Adding / deleting a person from dining reservations?

I have reservations for 3 for tea at GF for a trip this August. My aunt is probably going to be joining us, which makes 4.

I know I need to add her to the reservation, but what if she ends up not coming with us? Do I have to pay for 4 "meals" if only 3 of us are on the trip and I have reservations for 4, or do I need to call and change it back if she doesn't end up coming with us? I'm assuming the table will be the same size if it's 3 or if it's 4, but I don't want to be locked into paying for her meal if she cancels. I will know by Monday for a Thursday reservation.

No. You only pay for who shows up.
You do want to increase the number to who may be there. It is much easier to have fewer people than the reservation. It is much more difficult, sometimes cannot, add people at the last minute.
You are correct, that 3 or 4 should be the same table.
We had more of a problem going from 2 to 3,
