Adding DDP later?

I'm a little confused about the MYW package options. Sorry if this is the wrong place to post this, I'm unsure of where it would go.

So, we're booking a room and plan on using the extended military resort discount. Disney has said they are extending it, but their website doesn't have any details on it still. I have heard that when you use the military salute, you don't have to buy tickets through Disney, but you can still get the dining plan. But, we would be booking right now without the military offer, because we're going in November, and then adding on the discount when it comes out. Follow me?

I haven't decided yet if we want the dining plan or not. We're planning on staying at the Ft Wilderness cabins, with a full kitchen, and dh and the kids hate eating out. But I'm not sold on having to cook during my vacation. So we're still discussing options. I want to book the hotel, though. If we decide we want the dining plan, can we add it on later? If it turns out we have to buy the tickets through Disney to get the dining plan it's not a huge deal because truthfully the tickets at MWR aren't that much cheaper than at Disney.

So I guess my questions are, can I book a room only now and add dining later? Can I book a package with tickets and dining and then decide later that I only want the room?

I'm just so undecided about the dining plan. If it was just me, I'd get the deluxe plan, because I love eating out and I don't get to do it very often. Older dd likes to eat out some, but dh, ds, and the littlest dd really dislike eating out. So we're compromising and getting the cabins with a kitchen so they can eat some meals in the hotel, and then they will go out to eat with me. but I'm unsure if we will eat out enough to warrant the plan. Dh says we should pay OOP, but when I ran through the costs real quick we'd save some money if we got the plan because I want to do things like the Hoop Dee Doo, CRT, LE Cellier, etc. And I think the DDP would be more convenient. Honestly, this dining plan thing is really holding up booking our vacation because we're so undecided.
 
If you book the dining plan without the discount you would have to buy tickets. You could do either - book the package with tickets and convert it to a ticketless package later, having them remove the cost of the tickets, or book a room-only and convert it to a package later. Not so sure about booking a package and then converting it to a room-only reservation.

If your family dislikes eating in restaurants, in general a plan with a table service component would force them into a sit-down restaurant every night without much of an option to skip it. You do have several 2-credit restaurants, which would use up the TS credits, but you'd need to check if it would really save you money to use your TS credits on 2-credit restaurants. You might, since all your kids are under 10.
