Adding a Park Hopper Option at the parks?

I have a 3 day 1 park ticket.
If my kids really want to go to the other park in the evening, can I go to guest services and upgrade right there?

Yes. You'll pay the same difference on Day 1 or Day 3 as they don't prorate, so try to convince them to want to hop on Day 1.
