My aunt is a DVC member. She gifted us a stay at AK in April. We would like to add one person to the party, but I don’t want to inconvenience my Aunt (she would have to call.) The party will not exceed occupancy. Can I simply add her upon check in?

Only the DVC member can make changes to the booking, so your Aunt will have to change this before you check in. It's very easy to do online so she wouldn't have to call MS.
To add, if you were relying on DME to get there, only guests registered would be allowed. Sometimes, the CM at the front desk dont always know how to adjust DVC reservations and they do something that causes issues for the owner.
Best to ask your Aunt to just add via the online modification tool or email DVC. There is no need to call MS since you all are still going!
Simple answer, yes. I rented points recently and after arriving at the resort and checking in my brother and his wife decided they wanted to come to WDW. I called the front desk and explained that my reservation was not using my own points but a friends points but could I add 2 adults. They said sure just come to the front desk. I went down to the front desk and was asked if I wanted my "add on adults" to have room charging privileges. If so, I would need a new reservation. If not, then they would add them to the reservation and gave me 2 room key cards for them to use. CM even told me to have them tell security they were staying with me (my name on the reservation) and they would be instructed where to park their car. I even asked for a blow up mattress. No problem. Very easy!
I asked for a roll-a-way but the front desk cm said since I was in the villas it would be a blowup mattress. Housekeeping came up about a half hour later with the blowup mattress and beddings.

Interesting. She (the CM at the front desk) acted as if it was a matter of fact kind of thing. I didn't have an extra person in my 1 bedroom (4 people). It was just a sleeping arrangement situation. I didn't explain anything to her, I just asked.
Why wouldn't DVC do that for point using guests if they do it for cash paying guests? It seems to be a kind gesture on their part being hospitable to all guest of their resort.
