Add dining plan now or wait?

We are going in January 7-14 and staying at CBR. Should we add dining now or wait for a possible discount? If we add dining now, can we still get a discount later?

The dining plan itself is pretty much never discounted. You can get discounted package deals that include the dining plan, such as "free" dining and Stay, Play, and Dine.

You can always change to a discounted package when they are released if there is one for your dates. However, keep in mind that if your current stay is a room-only reservation, you'll have to pay an additional deposit of $200 for the package reservation, then wait on Disney to refund the original amount you've paid thus far.

If you're going with or without the discount, then I would book now. If you can't go without the discount, then wait.

We are going and definitely want to do the dining, but we didn't know if it's better to do the dining with a length of stay visit or park hopper? Or if there was an option to do it with park hopper tickets? We were considering busting universal for a day just so our 7 year old boys could see Spider-Man and Transformers (but this isn't a definite).

The dining plan is tied to the nights you stay on Disney property, so it doesn't matter what kind of tickets you get with that package. You can even get a ticketless package that includes your room and dining plan, and buy your tickets elsewhere.

If you decide to do the ticketless package, you have to call and ask for it with those words. You can't do it online.

48 hours if you are booking through the DVC office, but otherwise it is 72 hours when booking through Disney.
