Activities for after park hours for mom and 2 19 yr old sons?

My sons and I are going to Orlando for 3 nights during their college spring break in March. We'll be staying at the Lake Buena Vista Resort Village and we have tickets to Universal. We have tickets to see La Nouba one evening, but I am looking for some suggestions for the other nights. Universal closes at 7pm the nights we are in town.
