I have seen mention of more than one home resort to give you advantage of the 11 month mark then at the 7 month mark transferring the other points over? How does that work? Can you only book the number of days you have points for at that resort ? How would you know if you can get the balance of your trip?

You only get home resort advantage with the points you own there. So, for example let's say you have:
OKW 25 points
SSR 25 points
BCV 25 points

At 11 months, you can use your BCV points to book at BCV (for a total of 75 - if you banked all 25 of 2014 into 2015, use all your 25 points for 2015, and borrow all your 25 points from 2016). You cannot use OKW points to book at BCV at the 11 month mark.

At 7 months, you could use your OKW and SSR points to book additional nights at BCV pending availability BUT you cannot un-borrow your 25 points from 2016.

How do we manage this? We own enough points at both VGF and BCV to get 8 nights in a 1 bedroom every other year (and then are left with a few points to spare). So, in 2014, we spent 8 nights at VGF using 2014 and 2015 points. This year (fall 2015) we will spend 8 nights at BCV using some banked 2014 points, all the 2015 points, and a few 2016 points. Along the way we are spending 5 nights at a studio at Grand Cali using our "left over BCV points" from previous years.

The key here is that you cannot combine points from various resorts at 11 months. You can only use points from that resort at 11 months.

Thank you very much for clarifying that!!! This all gets so confusing!!!
