Everyone's different of course, but we like the Haunted Mansion's queue.
We were there last August, and it was crowded/hot and I think a lot of it with those queues boil down to courtesy in how long to spend at each "station". But for the most part, we thought there was enough time to play around with the HM things, making sure we were moving things along, and enjoyed them without our being rushed and without holding any other guests up either.
Some of the interactive queues can be fun, it is definitely better than just standing doing nothing! With that being said I've seen debate on the boards about it "holding the line up," personally I figure it doesn't change when I'll board the ride even if there's gaps, but other people like to keep the line moving and will expect you to stop playing when the line moves or a few may walk past you to try to fill the open space. There seemed to be a good number of people who had this opinion before, but I haven't seen much on it lately as I haven't gotten on the boards as much. Regardless, enjoy your vacation and do what you think will give your family the best experience! And for a specific ride, the soarin queue can be fun if it's open but I am not sure if they're changing it, if I remember correctly it moves a balloon or something along the screen based on the motion of the people in line, it was pretty cool!
Mine Train, BTMRR, Pooh, Dumbo, HM, Space mountain, Peter Pan, Soarin used to but who knows how it will be once its done, I think that is it. Are they worth it? I think that depends on the person. If you can get a FP to avoid a long line then go for it. If not these lines do help pass the time which is good.
I think the PPs have already listed most of the rides with interactive queues. They vary greatly. Some are really meant for younger kids to play in, Dumbo is a big play area you can use until your pager goes off and Pooh is a bunch of different things for kids to make noise with and play on. Others are more video game type queues. SM for instance is literally a bunch of video games with buttons built into the rail, while PP has sensors that detects your body/hands and the environment will react accordingly. Their worth will depend on your and your group. Most are good for at least a few minutes of "Hey, that's kinda cool" before it runs out of new things and you just see the same stuff over and over. Others are the best thing in the world if you have kids. (This last trip we did Dumbo just to "wait" in the play area, and then told them we didn't want to do the ride 20 mins later)
Interactive queues are a nice consolation prize when you have a long wait. But I've never felt they were worth choosing that over a FP when the option is available.
IIRC, Big Thunder has handles you can twist or push to make noises like a dynamite explosion etc, though I may be confusing it with Disneyland's BT. Mermaid has the crabs that move crap from one pile to another. Do I sound impressed?
