? about how many dining credits I will receive

Just a bit confused on exactly how it is determined how many dining credits each party receives. Does it depend on nights spent at the Disney resort or on tickets purchased? For instance, if we purchase one less park ticket due to going to Universal for one of the days will we still get the dining credits for that day due to us still being on Disney property that night? Or not because we won't have purchased tickets for that day?

It's one set of meals per person per night at a Disney resort.

So my family of 5 on the DDP for 7 nights will receive (5x7)Table Service, (5x7) Counter service and (5x7) snack credits.

It has nothing to do with the park tickets.
 
Dining plan is to get people into Disney resorts, and isn't available if you're staying offsite. It's determined by nights you're staying at a Disney resort. Minimum tickets you must buy are one day base for paid dining and two day base for Free Dining -- per person -- per room. You're not obligated to purchase more tickets than that directly from Disney.

When you arrive and check in, you will receive your entire allotment of credits. If you're staying 5 nites, 4 people, you'll get 20 table service, 20 quick service and 20 snack credits, plus you pick up 4 refillable mugs at the Food Court. Food credits will be on everyone's Magic Band, so you can split up and go separate ways during your visit. Your food receipt will state how many credits are left, but you can check at the Concierge desk to keep track of your family's use of credits if receipts go missing or somebody "forgets to tell you" about Dining Plan food bought in your absence. You're free to spend your credits as you wish, like 3 table service meals one day, no table service meals the next day. However, at any single time, you can't order more meals than the number of adults/children in your resort room. Quick service plan gives you 2 quick service and 1 snack credit per person per day, plus refillable mug. At Epcot Flower and Garden and Epcot Food and Wine Festivals, you can use your snack credits to purchase the small plates of food and non-alcoholic beverages sold at the little booths. It's a great value. On the Dining Plan forum, at the top, are lists of Dining Plan snacks and restaurants.
 

Okay, great. So I will still get dining credits for the day I spend at Universal but can use those toward a 2-credit TS meal or something else.

Yes to your question. Disney doesn't know what your day-to-day plans are, and many guests take breaks from the parks to go other places. The dining plan flexibility tries to meet the needs of assorted trip scenarios. Also, the MYW tickets expire 14 days after first use, and that also gives flexibility to most itineraries.
 
I'll also add that the dining credits expire at 11:59 pm on the day that you check out. So you COULD check out and still get lunch, dinner, and/or snacks using your credits before you head home. :thumbsup2
