A similar recipe to Le Cellier's Mushroom Filet

Hi,

It my husband's birthday this weekend and I'm cooking an all-disney world dinner.
I want to make him the mushroom filet dish from Le Cellier. I found the recipe for the Risotto, but I can't find the recipe for the filet itself (I only found a maple bbq filet recipe).

- Has anyone tried to recreate this recipe?
- Or can anyone suggest a (simple) Filet Mignon recipe that would go well with the risotto from this Le Cellier dish? (I already bought all the ingredients for the risotto)

Filet Mignon, Le Cellier, Canada, Epcot

Ingredients for Filet Mignon:
7 ounces beef tenderloin
2 ounces maple bbq glaze
¼ ounces Arugula
¼ ounces extra-virgin olive oil
salt to taste
pepper to taste

Maple Glaze:
¼ cup Plugra butter
1 small onion, diced
¼ cup chopped shallots
1 clove garlic, minced
¾ cup apple cider vinegar
¾ cup maple syrup, grade A dark amber
2 bottles of Bullseye BBQ sauce
1 sachet fresh rosemary
1 sachet fresh thyme
Kosher salt to taste
ground black pepper to taste

Preparation:
. . . medium sauce pan, placed over medium high heat
. . . add the canola oil.
. . . sauté the onion, shallots and garlic until it starts to brown and get caramelized.
. . . be careful not to burn.
. . . add the maple syrup, BBQ sauce and whole butter.
. . . wrap the rosemary and thyme in cheesecloth and place in the pan.
. . . mix very well and allow to simmer for 1 hour.
. . . remove from heat and pull out the sachet
. . . squeeze the herbs with tongs to extract the flavor.
. . . mix the sauce until it is as smooth as possible.
. . . adjust the seasoning and cool.
. . . store in airtight container.
. . . dip the beef tenderloin in the olive oil.
. . . grill the beef tenderloin to your liking.
. . . place 2 ounces of BBQ sauce on top.
. . . salt and pepper to taste.

Thanks, but if I understand correctly this isn't the mushroom filet, it's an older filet version that's no longer on the menu.
 
Funny you posted this, I made the filet and mushroom risotto for Christmas dinner this year, and it was FABULOUS!! My family raved about it, so our family has a lot of March birthdays so I am hosting a Disney Dinner. The filet, I just seasoned with salt and pepper and olive oil and grilled to liking and presented it the same way, on top of risotto.

I also made my own pretzel bread, nothing like theres, but good. Alot of work though.
 

That's what I ended up doing. The steak turned out ok, but the risotto was absolutely amazing! Exactly like Le Cellier's!

We love Disney world, but since we live about 9,000 km away, we can't go there a lot. I decided to do a low-tech version of disney in our apartment. I started the day with Tonga toast, and then PB & J shakes for lunch.
I drew some rides' logos on little paper signs. I did my own versions for the voyage of the little mermaid (he watched the under the sea video, while I blew bubbles at him), the haunted mansion, shrek 4D (not disney, I know. I found a 3d version of it on youtube), sounds dangerous, spaceship earch and others. It was silly and really fun.

We have this really scary elevator in our building, so for Tower of Terror, I took some courage and went with him on the elevator (along with music from twilight zone).
