Bottom line is that Disney states 5 to a room. When you have 6 you either need to get a suite or two rooms, and keep in mind there has to be an adult in each room if they are not connecting. Your other option is to get a suite offsite if cost is a factor. There are several local places that offer those accommodations.
However, if some people say that Disney will not count the infant, please call the hotel and make sure it will work to have your five + the infant in the room. In the past, I used to be a travel agent, and Disney never let us book five plus an infant in a standard size room. They may treat guests booking directly with them differently, so it's always better to call the hotel. You're going to get various answers here because people have different experiences.
