Yes, we own a mini van and often fit 4 adults and 3 kids, one with a car seat.

Which kind of minivan? Some fit that many people better than others. For example, I have a Honda Odyssey which fits 3 across in the second row. Not all minivans do that. The third row in minivans can be tight.

It will depend on how much luggage and "equipment" you have with you and how far you'll be traveling. Seating wise, you'll be fine. Minivans hold 7-8 passengers depending on the brand and you only have 6 people. Even with 2 in car seats, you will have plenty of seating space (this coming from someone who had 3 kids in car seats and 2 tweens/teens in a minivan on a daily basis for several years). We've traveled to Disney (1,000 miles) with 4 adults, 1 tween, 1 elementary school age child in a high-back booster, and a pre-schooler in a car seat and had space for all of our luggage (no roof rack), but we did not have a stroller or any other equipment. We did only pack enough clothing for about 1/2 of our length of stay and I did a few loads of laundry on our "slow" day so that we could keep our luggage at a minimum. If you're only going from the airport to the resort, you can put some of the small pieces of luggage in the passenger area (at the feet of those in car seats and on the unoccupied seat safely held in place with the seatbelt). If you're traveling from home to Disney, you'll want to make sure you limit the amount of luggage you take so people don't have to crawl over things every time you stop for a break.

How much/size luggage will you have?

We have a van and rented a van...a crappy dodge for both!

It has been myself, DH, our 3 kids (last ages of travel In April were 15, 13 & 11) and my mother. We each have a carry-on: kids their lo bean back packs, DH a back pack, me a LL Bean bag and my mother still travels like the 60s and had a ‘real’ (although a 2000’s version) carry on. Then we each have a suitcase that will fit in the over head (we do laundry). All the bags easily fit in the back, my kids may or may not keep their back packs with them for the ride to the airport and then the 20 min drive to my sisters in FL.
