My neighbor just dropped this off.

I have never cooked squash in my life! :blush:

Any ideas for something quick and easy? :hyper:
 
Slice it up, soak in Italian dressing, or olive oil and garlic... sprinkle with salt and pepper and throw it on the grill!

or...

slice it, toss it in a pan to saute with butter/oil ...and onions, garlic, chopped tomatoes and mushrooms... you can also add lots of other veggies like celery, carrots and maybe even a can of black beans.... nice over rice.

We just ate a big pan of the latter recipe last night.. yummy
 
Slice it into really thin pieces (like potato chips) and fry it in butter. Add some salt, pepper and parmesan cheese. YUM!

My favorite way to cook (and eat) yellow squash:

Wash squash and cut off ends at top and bottom.
Slice squash into rounds, about 1/8 to 1/4 inch thick.
Slice a peeled onion into rounds as well. I sometimes use the rounds separated, but sometimes I go ahead and dice the onion - it doesn't matter.

Put squash and onions together (I use a cast iron frying pan) into a frying pan and cover with water. You should have enough squash and onions to almost fill the pan, and add water almost to the top of the pan as well. Salt and pepper to taste - I like mine pretty peppery so I add a lot of pepper!!

Cook on medium/medium high until the squash and onions are very tender - about 30 - 45 minutes.

Now comes the fun part - you want to cook almost all of the water out without burning the squash, and you want to take a large spoon and start cutting the squash and onions up so that you are left with a "mush" almost. Just keep cutting the squash with the side of the spoon - similar to the way I separate ground beef when I am browning it for spaghetti.

if you can't wait to cook all the water out, you can drain it out, too. Once the water is mostly gone and the squash is all chopped up, give it a few minutes to fry in the hot pan, but don't burn it. I always try to get it to brown a little, but usually give up because I am ready to eat it. It will be delicious!!! The onions add a sweetness and the pepper gives it a little bite.

My mom used to add bacon grease to hers - just spoon a lump of drippings from bacon and melt it into the squash/onions once the water has heated up. But I don't use that - don't often make bacon and it's a lot more fattening that way!! Still, it's delicious with some seasoning, but great just plain, too.
I may have to make this tonight - I bought squash at the grocery store yesterday. Love it!!!!!
 

I like to slice squash and potatoes thinly , throw them in a packet of foil with olive oil and some spices , then bake about 45. I'm usuallly roasting a chicken or beef at the same time.

this one is a bit more tasky, but not too bad. totally worth it!! I make this at least once a week in the summer, it's one of the few veggie dishes I'll have seconds of. takes about a medium squash per person.

slice zucchini/yellow squash lengthwise into spears. cut out the seeds, so you just have the firmer flesh near the rind. cut trimmed spears into bite size pieces. chop up some onion, about 1/3 the amount of squash. you can also add diced bell peppers. saute everything in olive oil until onions are soft and veggies start to brown up/carmelize. takes about 10 minutes. when the veggies are done, drizzle in a little balsamic vinegar, 2-3 teaspoons or to taste, to deglaze the pan. serve with plain chevre (goat cheese) crumbled on top.
 
This isn't as healthy a recipe, but even my squash-hating DD eats this one.

Squash Casserole

2 lbs yellow squash, sliced or chopped
2 small onions, chopped
1 can cream of chicken soup
1 pt. sour cream (light works fine)
1 can sliced water chestnuts
1 stick margarine or butter
1 lg package Pepperidge Farms cornbread stuffing mix
2 c. shredded cheddar

Cook squash and onion in small amount of water til tender. Mix soup, sour cream and water chestnuts into drained squash. Melt buttter and mix with stuffing mix. Line casserole with half the stuffing mix. Top with squash, then cheese then remaining stuffing. Bake at 350 for 30-40 minutes.

I make zucchini like this, saute in olive oil, add parmesan cheese and brown!
 
Any muffin or bread recipe calling for squash. After baking, wrap tightly, freeze, and use as desired.
 
I like to slice it down the middle lengthwise. Rub it with olive oil, sprinkle with salt or garlic salt, throw some rosemary or other herbs on, and grill. Grill cut side first, then flip. Throw some parmesan cheese on top as the bottom grills. When you have some black grill marks on the squash, it is likely very tender and ready to eat.
