I have never cooked squash in my life!
Any ideas for something quick and easy?
My favorite way to cook (and eat) yellow squash:
Wash squash and cut off ends at top and bottom.
Slice squash into rounds, about 1/8 to 1/4 inch thick.
Slice a peeled onion into rounds as well. I sometimes use the rounds separated, but sometimes I go ahead and dice the onion - it doesn't matter.
Put squash and onions together (I use a cast iron frying pan) into a frying pan and cover with water. You should have enough squash and onions to almost fill the pan, and add water almost to the top of the pan as well. Salt and pepper to taste - I like mine pretty peppery so I add a lot of pepper!!
Cook on medium/medium high until the squash and onions are very tender - about 30 - 45 minutes.
Now comes the fun part - you want to cook almost all of the water out without burning the squash, and you want to take a large spoon and start cutting the squash and onions up so that you are left with a "mush" almost. Just keep cutting the squash with the side of the spoon - similar to the way I separate ground beef when I am browning it for spaghetti.
if you can't wait to cook all the water out, you can drain it out, too. Once the water is mostly gone and the squash is all chopped up, give it a few minutes to fry in the hot pan, but don't burn it. I always try to get it to brown a little, but usually give up because I am ready to eat it. It will be delicious!!! The onions add a sweetness and the pepper gives it a little bite.
My mom used to add bacon grease to hers - just spoon a lump of drippings from bacon and melt it into the squash/onions once the water has heated up. But I don't use that - don't often make bacon and it's a lot more fattening that way!! Still, it's delicious with some seasoning, but great just plain, too.
I may have to make this tonight - I bought squash at the grocery store yesterday. Love it!!!!!
