5 portions of fruit and veg - new ideas

Hi,

After wandering round asda to day I decided to buy a fennel -not sure how to cook it or what to put with it but I was fed up of buying the ususal veg.

I want to eat my 5 portions but want to make it exciting - I'm bit fed up with boiling carrots & peas.

Anyone got an ideas what to do with my fennel?

What different veg do you like?

last week I tried roasted butternut squash with onion garlic and potatoes and it was yummy.
 
I love fennel. :thumbsup2 I usually slice it thinly and roast it (with other veg/garlic/rosemary) in olive oil...
 
a few weeks ago i started going to a local market and ive made a point of buying a 'new' fruit or veg each week.
last week i brought tons of fresh peas in pods and made a pea risotto, it was delish ;)
i think i might try spinach as i havent had that for years.
i love bns aka butternut squash!
fennel looks good too, will try the roasting idea
 
I love sweet potatoe mash! It is so nice with lamb and spinach!
 

Butternut Squash also makes a heavenly soup.

If you have a juicer you can make lots of lovely concoctions using vegetables and fruits.
 
I too would do fennel like Karen, roasted in the oven. My MIL has it growing in her garden and is going to give us some soon.

We are really into sweet potatoes at the mo, we are out after school a couple of nights a week so I peel them, cube them and leave them roasting in the oven with garlic and olive oil. Or I roast them like normal jackets and scoop out the flesh for mash. Sweet potatoes are high in antioxidants.

I had asparagas (half price in sainsburys at the mo) roasted with salmon and new pots last night, lots of lemon and holandaise :guilty: but it was yum. The wild alaskan salmon was half price in sainsburys too:thumbsup2

I love trying "new" veg.....
 
I love swede and carrot with roast lamb :)

Also braised celery is nice as often celery is only eaten raw.

How about courgettes, either green or yellow? I like them roasted or for a full meal with a tin of tomatoes, mushrooms and garlic with parsly and a bit of tobasco sauce add some chicken and serve with rice or bolied potato.

I'm going to try the roasted fennel tonight -I'll let you know how I get on.

(I also bought some sweet potatoes yesterday as ASDA had a bag on offer for £1 will try some of your suggestions

I do a nice spiciy/curried parsnip soup :thumbsup2

I also like to eat a few jammy dodgerss each day as jam is made from fruit so that must be a least 1 of my 5 a day :thumbsup2 :lmao:
 
We had a surplus of homegrown fennel a few years back and used it, sliced and chopped, instead of mince in lasagne. Lovely!

I have a large, cast-iron griddle, and like to slice corgettes very thin (even sometimes with a potato peeler) and then dry grill then on there.. takes only a few minutes, and looks great, and adds no oil or fat. This also works with aparagus and aubergines.

But I still love mixing a pile of sliced and cubed mixed veggies, coating 'em in olive oil, adding garlic and rosemary, and roasting them in the oven! For the complete fix, roast them under a leg of rosemary and garlic studded lamb suspended on the wire oven shelf above, to drip the fat onto them!

For extra flavour and finish on roast veggies, add some red wine vinegar to the pan. Oh, and loads of black pepper!

Yum. Am off to eat things now!:lmao:
