5 days in Nov

Which would be better 5 days in Jersey week or 5 days Thanksgiving week (arrive Sat the 17th leave Thanksgiving day)?

Better in terms of crowds? Jersey week.

In terms of other stuff....could go either way. Jersey week you'll catch the end of F&W, probably the first MVMCPs, and great weather (usually). Thanksgiving week you'll get holiday decorations at all the parks and resorts, Candlelight Processional, etc.

They might fully staff the parks and have longer operating hours Thanksgiving week.

Regardless, I'd still probably take my chances with Jersey week.

Jersey week, no question.

But I would always go the week before or after Thanksgiving as I prefer lower crowds.
