"Swamp Cabbage" is made out of hearts of palm... which come from the center of a palm tree that someone actually cuts down, chops up, adds spices and god knows what else, and people actually EAT it. (Not me, but other people). I KNEW I had a job in the 'Redneck Nation' when they served it at our company Christmas party... I didn't even ask what it was- I just politely walked by it at the buffet. (It looks like saurkraut).

OK here I am feeling stupid, in my 30 years of life, I have always thoguht hearts of plam was atrichoke hearts.......

Man, now you? My old college roomie emails me today and asks if I have extra OSU-Texas tickets....she's going to be in town. I tell her they are on ebay, but if she wants to bid..... She threatens to show my kids pictures of me in college.

Luckily, I was MUCH thinner in college and the kids would NEVER believe those pictures were of me!

This delicate white vegetable comes from palmettos, small palm trees that grow in Florida (there are also some South American palm species). Harvesting the heart, or terminal bud, often kills the plant, so it is an expensive food; for the same reason, some conservationists object to its use. The entire palm heart, weighing two to three pounds, is sometimes sold fresh in the United States. However, you are much more likely to find canned hearts of palm in supermarkets. These have been stripped of their tough husk and cut into small pieces. The smooth ivory-white cylinders have a velvety, layered flesh. Rinse canned hearts of palm, then slice them crosswise and use them in salads.

My ds would probably like the hearts of palm.....they look like cheese sticks. He LOVES tofu.....got it the first time at bd mongolian barbeque b/c he thought it was cheese cubes. Now he goes up to the grill with an entire bowl of tofu and lemon sauce. uh...I'm not with him.
