If we have a 4 day single park ticket (found a deal), can we choose to use two of the "days" on the same day and go to both parks?

No. Just like at WDW, you can only use the ticket to enter both parks in one day if it is a park to park ticket.

Nope..You need a park to park ticket to do that. You also will not be able to ride the Hogwarts express with the single day/single park tickets

you are required to show your park ticket before you are allowed to enter the line.
if it doesn't have p2p, or an AP, you are sent away


but, there is a ticket booth near that entrance line you are directed to if you want to upgrade your park ticket.

doing so will allow you to ride HE.
