2nd trip coming up help me out.

We went last Sept for 6 days, went to each park and MK twice. We plan to go back for 5 days soon. We didnt see downtown disney last time. We are not interested in water parks or park hopper. For our 2nd trip we will likely skip Epcot with our 4 year old. What else could we find to do to fill in a day. Last time we swam the day of our arrival. We plan to do DD this time for one day, and likely MK with the lil one the most.

There is mini golf.....pirate cruise at CBR (I think)...pole fishing at POR.....various boats you can rent, canoes, peddle boats, etc, at several resorts, Poly is one.....You can do the activities even if you are not staying at the resorts.....

I often like to repeat a park during a trip, in case I missed something or just want to do it again.

There is also the wide world of sports arena, various dinner shows, DD has Cirque du solei (sp?) you will have to purchase tickets. Also, at DD there is Disney Quest if you like video games and the like. It cost a flat fee to get in, but all 4 floors of games are free. Anything from video games to ski ball to virtual reality roller coasters.
