A lot of people like the Wyndham Bonnett Creek resort. From it's thread a lot of people report being able to get a 2bdrm (with a fold-out couch in the living room) for around $100/night.

you might want to check out that thread for pictures as well as the recommendations on who to book with.

If you want a regular hotel with daily housekeeping and a free breakfast, we've stayed at the Residence Inn several times. The 2 b/r has a K and bath on one side, 2 queens and bath on the other side, a fold-out couch in the living room, plus a full kitchen, 3 TV sets, free internet and shuttle to the parks if you want it. When you add in the free breakfast for a large group of people we find it very cost effective. Check the prices for you dates and see if it works for your situation.
