2 Park Days Out of 7? Possible? Realistic?

Personally, I go to Disney for the parks, not for the pools or anything else. So for me, going to Disney for just 2 park days would not be worth it. However, I am not you, so if you think that's what is best for your family, go for it! If you get there and decide you want to add another day or two to your ticket, you can do it at the concierge desk at your hotel. You just need to do with when there is still a day left on your ticket, otherwise it's like buying a new ticket instead of adding on. So you'll just have to decide after your first park day. I have heard they charge a small change fee (~$10) but when I did this on our last trip I was not charged a fee.
 
At your kids age I would have wanted much more park time. The pool is all well and good but at Pop there aren't water slides and the pools can get crowded. I'd upgrade your tickets to at least 4 day one but that's just me :)
 
What about 4 days park for 7 days? Go at a slower pace. Leave the park earlier.
Have a pool/wander day. Go to the waterpark and then chill out for the rest of the day.
Sleep in, go to the pool, and then go to DTD.
 
I would upgrade to 4 days. I like POP and say to spend a few hours at AoA It is amazing. Too bad you wont be able to use the main pool but AoAs pools are locked. We have always gone value and my kids loved pool time. I am not sure that POP has enough to keep kids occupied for several days.

They will most likely need a day to recover from the cruise so I would use the first day or two for hotel days if you are still planning on only 2 park days.

Before our Wonder cruise this past Feb. we did three nights at AoA. The first day we went to Downtown Disney, lunch at the Pepper Market at CS and dinner at Boma, second day MK third day AK. My kids did not complain about the shortage of park time but if I had been there for a week and not gone to the parks I would have been miserable.

As a teen my grandparents took me to the Poly when it first opened. All I wanted was to hang out at the resort. I felt like a princess. I could have cared less about MK.
 

This trip has changed more times than I can count. Seriously!!

But today I paid our 4 nt Disney Dream cruise in full and we are doing 2 days post cruise. (I have to do Sat - Sat , no other choice but to do parks post cruise)

So originally we were staying at CBR for the week and I thought we would have plenty to do outside of the parks but now that we are only able to actually do 2 days - POP will work out great.
