2 Day Hoppers with a 2 year old

Guys,
My wife, parents, and I will be heading to Disney in a month or so. We have 2 day hoppers and for the most part have decided to visit Magic Kingdom, Animal Kingdom, and Epcot. Since we have a 2 year old coming as well we're trying to determine the best way to plan the 2 days.

I know Animal Kingdom as far as rides / things to see we can probably knock out in a half day to 3/4 day, so we wouldn't need to visit it 2 separate times. My question is to split up the visits as:

Animal Kingdom and hopper to Epcot
Magic Kingdom and hopper to Epcot

or

Animal Kingdom and hopper to Magic Kingdom
Epcot and hopper to Magic Kingdom

Thoughts or suggestions? Thanks in advance!
 
I have a 2 year old daughter, and by far the MK will have the most to offer to entertain a toddler. AK does have the animal trails and Safari and a couple other things to do, but a lot of it is too big for them or too scary (It's tough to be a bug). It's easily a 1/2 day park if you are looking for the child to be entertained by the attractions and don't plan to use baby swap for Everest and such.

Epcot has some exclusive character meets, but not a lot (IMHO) that would keep a small child entertained for more than half a day. Nemo with Friends is one, and my little girl enjoyed The Land boat ride, and she loves seeing the characters, but personally I would skip a park hopper for one of the days and stay at MK a whole day and then maybe split another day between AK/Epcot.
 
Assuming the parks you have listed are 1/2 day at a time, with a 2 year old, I would recommend your second option with more time in MK.

The first plan is good too if the 2nd day is mostly MK and just hopping to EP for dinner or show in the evening.

I guess it really depends on your priorities and if you're looking for attractions that your 2 yo will enjoy or if you're looking for some more adult type things, like meals, that WS at EP would offer.
 
As PP said, spend one whole day at MK, don't waste time hopping. Then split your second day between AK and Epcot. Figure out what you want to do at each park and portion out your time that way.
