Since you don't know where you will be staying and how much you will be cooking, I'd stick with looking at park restaurants for the time being. You can always add or change later.
How would the boys deal with a princess meal? A lot of people say you have to eat in the castle at least once, but the cheaper option (and the better meal, from recent reports) is the princess meal at Epcot. The major upside is that princess meals are one of the best ways for your kids to actually talk WITH characters, rather than just do the "hug and picture" thing.
My choice for a "meet Mickey" meal would be Garden Grille at Epcot, which is also just one of the best meals around, especially for kids. Homey but DELICIOUS fare in a great environment.
If they're not character folks, I recommend Coral Reef in epcot.
in MGM, Sci Fi may not have gourmet food, but it's definitely a very unique atmosphere. And the chocolate shakes are to die for.
At the MK, another character meal is Crystal Palace, which consistantly has an excellent buffet. That one is all Pooh. I recommend breakfast. Alternatively there are several excellent restaurants all on the monorail, just minutes outside of the park, if you want more variety.
Right now meals are VERY limited at AK. I would recommend waiting to see if the new restaurant will be open in Asia when you go before making any decision.
