Help!

When can we start booking excursions - we are CST - is it ar 2 or 3 am?

We are on the 7 day eastern Magic - late seating with 2 17DS, what rotation should we expect, and when are the special nights - not to miss - we want to book Palo one night.

Is there a place were we can see what usually goes on - like tastings, etc so that we can get an idea of when to book rasul, etc.
