We are planning our 4th trip to Disney for next spring and have stayed on-site each previous time. We have debated about staying off-site this time but haven't made up our minds. If we reserve our 10 days on-site and then change our minds to off-site, would the restaurant reservations we made using the 180+10 timeline be cancelled?

If you've already made your ADR's then they won't be cancelled.

Keep in mind though, that if you are staying off site, your fast pass reservations can't be made until 30 days from your first park ticket purchase. On site guests can do 60 days, so the most popular attractions (seven dwarfs MT, A&E meet and greet, etc.) will be long gone.
