Have a meal at the Coral Reef Restaurant in the Living Seas Pavillion at Epcot
Check out the Piano Lady at the Rose & Crown in Epcot
Parasailing at Sammy Duvalls
Jetskiing at Sammy Duvalls
Try that new tehered Balloon thingy that just opened in the Marketplace
Go to Disney Quest (if you like video games - The Pirates in the Caribbean is awesome)
Play golf at any of the Disney courses. They are all really nice!
Another Epcot one - After the fireworks, just hang out and leisuelry stroll out.
Yet one more Epcot - Go snorkling in the Living Seas and wave to the people eating at the Coral Reef Restaurant.
Take any of the back stage tours.
If you want to break in that new AMX Gold card, eat at Victoria & Albert's.
Monitor Kennedy Centers Rocket Launch schedule. you just might get lucky and you can easily see a launch from Orlando, though driving down to the Cape is fun too.
