Has anyone done this cruise, was just wondering how they do the shows and dinner, do the just repeat the second week or do the bring in more shows? And I know it's technically not a week just 4 more days, but that's each restaurant almost 3 times.

Longer cruises bring in more shows, including performers like magicians, comedians, musicians. The menus are different every night. We've been on two 15-night DCL cruises and there were no repeats.
On our DCL Panama Canal cruise the highlight was Susan Eagan, the original Belle from Broadway, and the voice of Meg in the animated movie Hercules. On our DCL Hawaii cruise they brought in a local children's hula dance company.
On the Panama Canal cruise the chef was experimenting with new menus, and we had lots of crab. They also had two lobster nights, but those were different varieties. One was very tender. The other, not so much.

One of the best things we got to experience onboard our 10 night Hawaiian cruise in 2015 was a special backstage tour of The Walt Disney Theater.
We were told they offer it only on longer voyages (we had 5 straight sea days). I loved seeing the behind the scenes area.
If they do happen to offer it to you, arrive early the lines get super long.
While I haven't done the current southern Caribbean cruises, I have done plenty of cruises longer than 7 days with DCL. They do not repeat shows or menus. For the shows, they will not add any of the full "Broadway" type shows -- they just don't have room for the scenery. But they do add long shows from some of the performers (the magicians, comedy acts, hypnotist, etc. that they have on board already). They may show a movie in the WDW theater at showtime instead of a live performance. They will provide some type of show each night and it won't be a repeat of any previous night.
As far as dinner, yes, you will be rotating through each of the Main Dining Rooms more than twice but you will not get a repeat menu. They have a variety of theme menus that they will pull out and serve. So you will have the 3 signature menus for each of the restaurants and the other 8 nights will have a special theme menu that all the restaurants will serve.

You will enjoy it, it was wonderful. We had one of the entertainment cast members as our tour guide and his parents were in our tour as well, so much fun.

Although they do usually only happen on longer cruises with lots of sea days, always ask just in case (guest services or even an officer).
I think it was the last transatlantic I worked, we were told that they weren't advertising certain tours, and they weren't guaranteed, but if anyone asked, take their room number, but don't promise anything. If enough people asked to make it viable, and staffing was available then they'd see what they can do.
