I am trying to plan out a menu, and stick with it. I have 1 days I am unsure of, and wondering what everyone else is doing this week.

So far I have:

Mon: Chicken Monterrey and Mac n cheese
Tues: Barbacoa
Wed: Cream Cheese Chicken (from crock pot thread)
Thur: Tilapia Tacos (dh will be cooking since we have a cheer camp and then tumbling classes less than 2hrs later)
Fri: Steaks, baked potato and salad
Sat: ??

I want to try the Asian Chicken but thinking I might be overdoing the Chicken this week if I do it again!

I am thinking I will make swedish meatballs for lunch on Saturday.. not sure for dinner though.

What about leftovers from the week? There's bound to be leftovers from a couple meals, right? So unless somebody is eating them for lunch or something, it's a really budget solution. Your menu sounds good so far, though!

We take leftovers for lunch, or the kids eat them for lunch. We wouldn't have enough for a meal.

If we are home on the weekends, I like to do like a late lunch/early dinner, and then if needed a quick, easy snack in the evening. We would eat around 3ish. It really works great for us.

Breakfast for dinner? (Eggs, pancakes, sausage etc.) It's a lifesaver for us on the days where we don't have too much time or just don't feel like too much cooking.

And this post made me realize I need a menu.. this week is just nuts with the amount of stuff we have to do in the evenings. If I don't plan we'll get take out and I don't want to waste the money:headache:

Last night we had pork scaloppine with wild rice and asparagus.
Tonight we'll have pancakes and sausage.
Tuesday: marinated flank steak with twice baked potatoes and salad
Wednesday: chicken marsala with spinach and pasta
Thursday: black bean tortilla casserole (vegetarian)
Friday: chili
Saturday: flank steak tacos or salad or quesadillas (not sure which yet)
