What was in that delicious sandwich at Kringla Bakeri Og Kafe?

Okay, on our visit over spring break we ate at Kringla Bakeri Og Kafe. I had one of the giant sandwiches, one with ham and thin, green apples slices, some sort of cheese and a sort of yummy jellied (maybe apple-flavored?) goo, all on a hearty multi-grain bread. Does anyone know the cheese, and what the goo is? I want to make my own.

Don't know about the green goo, but I think the cheese is havarti. GL and let us know how they turn out
