How much info can the cashier see when using the rfid enabled room key for purchases on their screen? Will they just see our name?
or will age?
or date of birth be visible?
Will address or any other info be visible?
This privacy concern doesn't seem to have anything to do with the RFID technology. All the technology does is provide a unique code to the receiving device. That is exactly what happens when you swipe your KTTW card at a shop.
Let me rephrase my question then: When using the KTTW card at shops and restaurants, what information about you shows up on the cast members screen?

Not even your resort name? what about if you have the dining plan? Does it show the #of adults an # of kids, or does it show everyone in the party's names also?

Nope. A CM that is using your KTTW will not see any of that. They swipe it, the register tells them if it was authorized and then your receipt will specify how many dining credits you have left.
Can solve 100% of your concern by simply using cash or your own personal credit cards to make a purchase.

Actually, wouldn't it have to say how many kids and how many adults, since they need to know how to enforce the kids getting kids meals? (btw, this is not the concern of my question since my kids are way above the cutoff and are counted as adults - but just curious)
