Been incredibly busy at work and my project launch dates looks like they are being turned on their head again. :faint:


Alison - :hug: I so understand not wanting to get out of bed in the morning these days.

Ellen - I'd forgotten that you didn't like peas. Is there any reason you don't like them?

Kimmar - Your meals sound fantastic!

Brandi - Still no sign of spring???? :flower3:



WFDT? Actually.....it's more about what was for lunch! We had lunch at my mother's today and I'm so full I'm going to skip dinner.

I'm looking forward to working out what to cook for low-carb weekend this weekend.

Good grief what a day I had yesterday - actually it started Wednesday night. We had our last Lenten Dinner Wednesday night and we served over 100. It was 9x13 night so there were lots and lots and lots of good eats. The Faith Friends (pre - 5th grade) presented our worship that night. Oh it was fabulous. Liam was a "other people" he really wanted to be a donkey (that is usually what he is in the Christmas drama). And Ethan was Jesus. They did the scene at the tomb. The kids did a wonderful job! We all pitched in after services to clean up. I didn't get home till after 9. And literally showered and fell into bed. Yesterday my committee did the last Lenten Lunch. We served over 175 for lunch and services. I have a great committee of ladies who work great together. But we were still working till after 3. Then we had a Circle meeting till after 5. I will tell you, by the time I got home last night I was all done in. I still don't have my energy back 100%. Doug helped with dinner and I had my PJ's on by 7pm. Let me tell you - I slept real good last night!!
I am looking forward to Holy week for sure.

Alison ~ Yes there is scalloped potatoes and Ham on Nutrisystem and turkey and dressing, lasagna, hamburgers, meatloaf, ravioli, chicken alfreado, pizza and the list goes on and on. I am only on the "cheap" version. There are plans that have frozen foods and more gourmet, but I am fine with this one. And if you are really trying to watch your Glycemic Index this is perfect for you. That is one of their main objectives. I eat on plan and fix regular meals for Doug and surprising without him even trying he is losing weight also. The thing I love most about NS is I am NEVER hungry. If you want more information just let me know. I can get you some great discounts.

PIO ~ I have never liked peas - EVER!! When I was little, me and my brother had to try a bite of everything on our plates whether we liked it or not. But after me turning greener than the peas every time I had to eat them, my Mom finally gave me a kitchen pass on them. I have always said that God really messed up when he made Kansas (that's a whole 'nother story) and peas. Little round balls full of mush are just gross. But I can honestly say that they are the ONLY thing I can't eat. I pretty much love every other vegetable.

Brandi ~ Bless your heart. You all have really had it this winter. It has been cloudy here for the last 5 day with very little, if any, rain. They are even saying today there could be snow flurries. I have seen our worst snow storms in March and April, so I am sure we aren't out of the woods yet.

Kimmar ~ I love your chicken meatballs. Those are one thing from here that I fix a lot. I usually have a batch in the freezer. They are so good!! This last summer I was able to get tomatoes and I made a great marinara sauce and they are wonderful together. Every time I fix them I think of you!!

Well I guess I have now written a book. I guess that's what you all get for me not being in here yesterday. :flower1:

WFDT ~ Pizza and a beer. We/I so deserve it.

I'm back to actually cooking again. We have had the following meals this week:

Monday - Chicken Florentine
Tuesday - Beef Cube Steaks with tomato sauce and roasted asparagus
Wenesday - Pork Chops in Citrus sauce with roasted vegetables
Thursday - Costco Hawaiian Chicken with pineapple, stir fired veggies and I splurged with rice.
Tonight will be Meatloaf, salad and Creamed Spinach.

Thanks for the offer Ellen, but Fran would flip out if I wanted to do Nutrisystem. She seems to be coping OK with the current eating plan. She gets a sandwich for lunch. I generally skip it. Seems to be the only way I can lose any weight.

Ellen - sounds like you had a great Lenten. Busy and such hard work; but that would have felt so good to feed so many.

I'm completely off-plan right now. :(
I've been having a few 3D catch-ups with friends and really haven't been in the mood to watch what I eat.

Hope to be back on plan after today. I really need to get to the shops to get stuff for the low-carb meal.

....what was for dinner last night? GF pizza [for my DH] and regular cheese pizza for the rest of us.....gosh, it really felt great to sink my teeth into a slice of pizza - haven't done that in a long time!
 
We had pizza a couple weeks ago, it was a nice change.

Tonight I'm making a ham and zucchini boats.
 
I'll eat any of that except cauliflower, but I'm supposed to avoid potatoes due to their glycemic index. Right now, I'm having leftover chicken Florentine for breakfast! :thumbsup2

There is a lot of protein and fiber in these veggies, things that will make you feel full longer...

WFDT? Grilled chicken breast, sliced, mixed with penne and vodka sauce....GF, of course!
 
Cauliflower "Fried Rice"



It's low-carb weekend for the Diners and I found inspiration in a Paleo diet recipe and adapted it to an old favourite.

My starting ingredients:

  • Cauliflower, 1 large head - cut into florets
  • Carrots, 3 - diced
  • Green beans, handful - diced
  • Green Bell Pepper, 1 - diced
  • Frozen Peas and Corn, 1 cup total
  • Kecap Manis, 2 tablespoon
  • Soya Sauce, 4 tablespoons
  • Garlic
  • Ginger
  • Oil for frying
  • Eggs, 4 - beaten (not shown)


Does it look familiar? Those of you who are regulars on this thread will recognise that I use these ingredients for fried rice. So.....what did I use for the rice?

Pulse the cauliflower florets in a food processor until it resembles rice! I did mine in two batches so that I could make sure that I stopped processing at the right 'grain' size.

In a moderately hot wok, heat some oil and cook the beaten egg omelette style. Remove from heat and reserve for later.

Place more oil in the wok, the garlic and ginger and the carrots, bell peppers and green beans. Fry for 2 - 3 minutes.

When the vegies are 'al dente', remove from the wok. Transfer the cauliflower rice, the cooked egg and the frozen peas and corn to the wok and toss on high heat for 2 - 3 minutes.

Transfer the cooked vegies back to the wok and add the sauces. Toss all ingredients together until well mixed.

My cauliflower 'fried rice' was delicious! It was a hit with my DH and even DS ate a full plate.

Both DH and DS are happy for me to add this to the meals rotation.....although DS said "not too often". Much as he liked the dish, he missed the carbs for dinner tonight!

David and I have tried this twice, and we try to go oil free, and it just does not "Coat" everything as well. I am glad you liked it and the DH and DS were on board with it too.
