WFD? We are having a lemon chicken picata that I saw on the Chew last week. It has a Quinoa side salad that goes along with it and I'm making pancetta wrapped asparagus as our veggie.
....I made Asian chicken with red and yellow peppers and green beans and served it with brown rice mixed with quinoa...

With my current crappy choice of eating, I try to remember some of the things you've made for your DH. For me the gluten free part of the diet is not that bad, it the "no dairy" that's really killing me. I can work without most sugar (at least added sugar). If I had to drop natural sugars there would be practically nothing left for me to eat but meat, chicken and fish.

This is the recipe, it does call for capers. I better see if I have any. If not I'll have to pick them up when I take Darcy home. I just got back from the store. I'm subbing spinach for the arugula. It's too bitter for Fran.

GRILLED CHICKEN PICCATA
  • 2 lemons (juice and zest)
  • 4 chicken breasts (pounded thin)
  • 1/2 teaspoon salt
  • freshly ground black pepper
  • 2 tablespoons extra virgin olive oil
  • 1/4 cup flat leaf parsley (finely chopped)
  • 1 clove garlic (minced)
  • 1 tablespoon capers (finely chopped)
FOR THE SALAD
  • 2 cups cooked quinoa
  • 1 cup arugula
  • 1/4 cup canned chickpeas (drained)
  • 1/2 red onion (minced)
  • 1/4 cup extra virgin olive oil
  • 1 lemon (juiced)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
step-by-step directions
  • Preheat grill or grill pan.
  • In a medium bowl, combine juice of 2 lemons, zest of 1 lemon, salt, a few grinds of black pepper and olive oil. Pour the marinade over the chicken. Let chicken soak in the marinade for no longer than 10 minutes.
  • Place chicken on preheated grill, cook 3-4 minutes per side, until cooked through.
  • Chop together remaining lemon zest, parsley, garlic and capers. Transfer to a small bowl and set aside.
  • Serve with gremolata on the side.
  • For the salad: In a large bowl, whisk together the lemon juice, honey, Dijon mustard and olive oil. Season with salt and pepper. Toss the warm couscous in the dressing along with the arugula.

WFTD? Picked up a couple small turkey breasts and all the fixings. With the MOUNDS of snow we have outside and it already started snowing again, I am in the mood to good up a big ole dinner. Might even whip up a chocolate cake too.

morning everyone...

David and I are finally getting into the planning for the Grand Canyon trip...

Lots to do, and we are a little bit behind but it will all be ok.

We leave on Wednesday and will be gone for two weeks, so I will have to catch up on the return.

It's the end of Sunday here. :(

Today, I relaxed the healthy eating kick. We headed out for lunch with my aunt and I had pulled pork and coleslaw bun. Actually, I had about 3 bites of the bun and then "pulled" the pork and the coleslaw out. For dinner, I had accidentally defrosted some chicken sausages by mistake. Rather than waste it, I cooked it. Dinner was just the sausage. No bread or carbs...some salad and corn. Technically, the sausage wasn't on the eating plan but then I figured I'd been good for 6 days now.

Back to it tomorrow.

I spent the weekend not doing very much. I had all these plans for clearing out yet another corner and yet another cupboard. But it was so hot here that I really didn't feel like doing anything. I guess there is always next weekend. :)

Our weekend has been very busy here. Today friends invited us over for a Oyster Fest. So I think I am going to indulge in the oysters today. I will take photos and post when we get back.

Tonight will either be fried chicken sandwiches & homemade fries OR meatballs in a brown gravy with mashed potatoes.
I normally go grocery shopping on Sunday mornings but my son had to take my car to work and now I have to wait until he gets home around 3:30. So whatever I feel like making once I get home. Who knows.....it could also be take out. :flower1:
 
I have one of those either/or dinners too! On the dinner schedule is Dungeness Crab, salad and cauliflower mash. However, there is a Happy Hour mixer today at 5PM that Fran has indicated an interest in attending. If we do that I might not want to cook dinner. She has said that we can go out for Shabu Shabu, or Hometown Buffet. So we'll see what we end up doing for dinner.
 
It's going to be an interesting dinner tonight. Normally I do home made burgers on a Monday night. But DS decided that he didn't want chicken sausages for dinner last night and so we ended up doing a take-away burger for him. I'll have to check with him to see how he feels about burgers two nights in a row.
