No cooking for me tonight. Erica and I are using gift certificates to go to a spa. Marisa is going to take us so that we don't even have to drive home. We can just melt into the car :woohoo:when we head back home.

I always hear about spa days but I've never been to one. Isn't that pathetic! Enjoy your day!!!

I'm not sure what Scott and I are going to do today. Probably just chill out. I'm making dinner tonight though: Kitten Cajun Pasta with Extra-special Kitty Bread :)

I'm cracking up at the kitty stuff :laughing:

Cinco De Mayo was a big hit last night- I made a pitcher of Margaritas in our Tiffany pitcher we got as a wedding gift (1996) and have NEVER used. I figured, why have pretty things if you don't use them?? If it gets broken, it gets broken. Jack and I listened to Herb Alpert and the Tijuana Brass while I made dinner (tacos, right out of the box!) and my dh was running. It was fun!

I am cooking this coming weekend though. I'm having my family and his family over for a Mothers Day dinner on Sunday. Probably 12 people total.
So far - this is what I'm making:

Spinach dip and chips (from the Knorr Veg Mix - but I mix in more stuff and make it my own)
Grilled shrimp (2 - 3 ways - haven't decided what ways though - any ideas?)
Salad and fixings
Roasted Chicken (a recipe I found in Food & Wine has one where bacon is put in the food processor with the other rub ingredients - sounds delish)
Grilled Tri Tip Roast (if i can find one around here - if not I'll use a sirloin roast or something similar)
Roasted Garlic and Olive Oil Cous Cous
Oven Roasted Vegetables
Potatoes Au Gratin
Yeast Rolls (I would love to home make - anyone with a great easy recipe?)
Ice Cream Cake (I'm buying this somewhere)

I hope everything turns out good. I may practice some recipes this week on a much smaller scale. I get nervous about cooking for everyone. But I really do enjoy it too!! Crazy huh! :rolleyes1

I had plans to make that lemony tuna pasta I was going to make Fri but I just remembered that I used the ziti I bought for it when I made pasta and pesto instead. And I really don't want to hit the store... we may eat out. I dunno.
 
Going to an awards thing tonight, hopefully there will be good food. The thing I went to last week was veggies and dip, cheese and crackers, fruit, artichoke dip and desserts. :sad2:
 
Aimee- I wish it was a spa day. It is more like a spa hour or two, but I'll take it :thumbsup2
 
Last night was Chipotle due to Cinco de Mayo. Tonight *should be* bar-be-que tofu, but as I'm heading off to ElderNephew's school concert after work (thereby not getting dinner umtil 9ish), I may wimp out and heat up the trader joe's risotto.
 


How do you make your salsa? Now that I have my food processor, I really want to try my hand on it.

Big thanks to Nancy, lucas, Lauren, Laura, and Sheryl for the anniversary wishes. I hope DH remembers I requested Chinese for dinner. He probably won't ,so I'll have to go to the store and get back-up food. I think I'll get him a little cheesecake, since I've been craving it. ;)

No recipe - just tilapia and sprinkle on salt, black pepper and lots of cayenne pepper!

Garlic and Wine Grilled Shrimp

1/2 c. butter or margarine, melted
1/2 c. olive oil
1/2 c. white wine
3 garlic cloves, minced
1/4 tsp. oregano
3-4 bay leaves
2 Tbsp. Worcestershire sauce
1 Tbsp. soy sauce
1 tsp. seasoned salt
1 tsp. pepper

Combine all ingredients, mix well then add shrimp and marinate 4 hours. Remove shrimp from marinade and place in grill basket or thread on skewers. While grilling, baste with marinade.
 


Hey all--sorry I wasnt around this weekend. Time just got away from me. We decided last minute to landscape our front yard--so we spent all our free time with that.

Kathy--meant to post that your bolognese sauce was a hit with my group, and super yummy with the San Marzanos!

Tonight will be a thrown together baked ziti--no recipe, just throwing some stuff in a casserole dish and baking.

Hi all!!!! I'm back...got another keeper...lol

Beef Rouladen

Thin sliced steak (usually sold as braciole-could be round steak or sirloin-like flat slabs off the top of the steak-these were about 4x6 inch pcs)

dill pickle -cut in strips lengthwise-to taste

garlic-minced to taste

finely chopped onion-(used vidalia)

fresh parsley

ramps(baby leeks)

sliced mushrooms

Beef Broth(used college inn)


Take the steak-pound out thin-maybe 1/8-1/4inch-lay a strip of pickle, garlic, onion, a bit of parsley, roll up together and tie in the middle with butcher's twine.Continue till you run out of steak-can be adjusted. Brown in skillet in about 1 tbsp of olive oil til browned. Add about 1/2 a box of beef broth -depends on how much gravy you want. Add mushrooms, 1 sliced ramp, and remaining onion/parsley and simmer for about 2 hours on low. I thickened the sauce with flour/water mixture right before serving. I made egg noodles and when they were cooked just tossed them in the skillet and tossed to coat.

Sorry if my recipes aren't exact-I am a very experimental kind of girl-and do stuff to our tastes-but it was very tasty and had alot of layers of flavor with out a fuss. Definitely company worthy..lol

I am sooooooooo making that!!! As far as I'm concerned- any recipe with 3 cloves of garlic in it has GOT to be good!

Laura, You're dinner looks delish! I'm just wondering which one of your kiddo's consistenly requests the mac & cheese:laughing: Are the kids eating the salmon? I'm having "issues" with Alexis lately, noodles & shrimp or nothing. I had chicken scalloppini pasta leftover today, she asked for "I want the noodles only, no onions or green stuff please! & oh I want that with that with extra cheese." :confused: I must look like a short order cook! :laughing:


Here's tonight's dinner. Pork loin cooked in a mole sauce, spanish rice, my version of latin cole slaw & guacomole. This was yummy.

Tonight it's leftover Kitten Cajun Pasta. I have been on a Barilla Plus kick and that's what I used for the penne. Boy was it 10000000% better!!!

We are having boneless pork chops on the grill. I have them marinating in a pinapple teriyake sauce. Not sure of sides yet but maybe a nice tossed salad...
