Spotted some new wording on the UK site regarding Dining Plans.

"
  • Signature Restaurants require the redemption of two waiter service meals per guest. Items on the menu that exceed $40.00 ($75.00 in Signature Restaurants) may not be available for a Disney Dining Plan Table Service meal without payment of a surcharge.
"

from http://www.disneyholidays.co.uk/walt-disney-world/dining-plans/

are there any non-signature entrees over $40 anyway?

Im not sure but there are definitely signature items that exceed $75 - that might answer the questions about the Wagyu steak at the Yachtsman!

We have of course noticed many of the $75+ meals being changed, such as the lobster tail now being a $25 add-on at Narcoosees instead of being "included" with the steak.

interesting! @Candycane83 I think this pretty much answers the wagyu question! It would probably be available with surcharge. Biergarten it is!

Depends on if they consider buffets as menu "items".

That would be a game-changer.
Doubtful since the buffet price includes drink and dessert. A $40 entree + $3 drink + $7 dessert = $50 so I would expect any of the buffets in the $40's would not incur a surcharge.

Maybe not, but the big rumor barely a month or so ago was that the character buffets were going to 2 TS credits. So, I wouldn't really rule anything out.

I've booked deluxe dining for Dec 2016 trip and would be very annoyed if they tried to retroactively change this since that was not specified in any way in their 2016 dining plan info (it does have language about adding/removing restaurants but doesn't mention exclusions or dollar limits beyond additional cost for prix fixe options.) For 2017 they've advertised there may be an additional cost for certain menu selections so I guess it's fair game for 2017.

This change would basically make the Disney deluxe dining plan something we'd pass on in the future and would make the value of the room only discounts look more attractive (versus FD).

I would say this statement pretty much covers most everything...."Operating hours, menus, entertainment, Characters, Disney Dining Plan locations, components and terms are subject to change without notice."

Nice little catch-all there.
