We're planning to sail again in 2012 - hopefully to either Alaska or Europe, depending upon the itineraries offered. We are a family of four, but we'd really like to book 2 adjoining verandah staterooms - would we have to pay more to book one adult & one child in each room than we would if we booked a single stateroom?

Yes, you will. When you book a stateroom you pay the full, adult fare for the first two guests, regardless of their ages. By booking two staterooms you'll be paying 4 adult fares instead of for 2 adults and 2 children. Sometimes this still works out to be less than booking two staterooms, however since you are using verandah staterooms in both scenarios you can expect to pay more for two.
 
I would recommend looking for 'connecting' staterooms. If you ask for 'adjoining', that just means they're next to each other, and not necessarily have a connecting door.
