Saying Hello in World Showcase and other questions

Hi,

Planning our family trip for September 19-27.
In need of some help with EPCOT and the search doesnt seem to hook me up.
I remember seeing a thread or list about how to say hello in each country of the World Showcase. I know how to say Hello in Canada and the UK (and maybe one or two more) but need some help with the others. Anyone got a list or a link?
Oh, and a link or list to eating around the World would be cool, too. We're on the DP and want to use Snack and Counter credits to do it. Canada doesnt seem to have a counter service, does it?
