If you are sailling from Canaveral, I would stay at La Quinta Inn. Right on the beach, next to the pier., short walk to Publix grocery and restaurants. Good restaurants on the pier itself.
The Ron Jon Resort is not on the beach, except for a building that is somewhat close. You have a good walk, or can take the golf cart shuttle. It is the equivalent of a few blocks inland.
Keep in mind the only rooms that are oceanfront at Ron Jon's can be rented for a minimum of a week only. If you are staying for a shorter period of time, you will be inland with no ocean view. There is a golf cart/shuttle that will take you to the ocean walkway though. It is definitely a fun resort. (Oh, do look at the posted pool hours on their website...that's another turnoff for some folks.)

We stayed at the Hilton Cocoa beach for the night before our cruise. It was nice, but nothing special. The beds were super comfy, though. And it was right on the beach. There was a bar/patio area out the back entrance and then little wooden bridge and then you were out on the sand. There wasn't a whole lot else there, but we were only there one night and we just wanted a room and access to the beach and that's what we got.
