I thought about it and I am not comfortable

Every trip there is at least a day or two where our plans get all banjaxed and without fail we manage to get a same day adr somewhere nice. Maybe we end up eating dinner at 8:00pm or 4:00pm but we get through it.

There are many resources online you can google that provide information about the gluten-free menu items at Disney. This is one that I use frequently when planning ADRs: http://www.glutenfreedairyfreewdw.com/dining-resources/menus/

Also, if your gf family member likes fried chicken I highly recommend getting a reservation at 50s Prime Time - they have a gluten-free fried chicken plate that was so good it made me cry!!! They even have gluten-free smores for dessert.
Remember if you want to order it, let them know ahead of time. Otherwise it takes forever, and I've heard rumors that they have said that they can't do it without the advance notice.

I generally notify Special Diets about a week before our trip. They need the number of people ordering gluten free fried chicken and the date and time of the reservation. I then stop by right when they open to let the chef know that I am there and I will be back at my reservation time for the chicken.

It is really, really easy to eat gluten free while at Disney. I've been gluten free for over 10 years and I've never found a more accommodating place. OP, you should feel more than comfortable making some ADRs.
 
Another suggestion - let your family member look at the on-line menus for some of the table service locations ya'll are interested in - then which ever ones appeal to him/her - make your ADRs at those and like other posters have said note the special GF requirement on the ressie.
 
Gluten is one of Disney's common allergens, so if it's a simple gluten-free diet the quick service places will know which items are gluten-free. If it's more complicated (additional restrictions beyond gluten), table service is actually a better idea. A chef or allergen specialist will come to the table to discuss, or give a tour of the buffet. I brought a friend who is on a gluten-free diet to food and wine festival last year and she LOVED that all the gluten free items were marked, and the night before we had table service at Port Orleans Riverside. They were temporarily out of allergy menus (which would have been adequate for her diet), so a chef came out to confirm that the items she chose were gluten free! Disney is leading the industry in handling food allergies, I expect your family member will be amazed.
 


It is easier for me to eat gluten free at Disney than anywhere else! The chefs are fantastic and more than accommodating.
 
I am GF, and WDW Table Service Restaurants are the BEST! The chefs really take care of you, and they will offer to make you a special item if you'd like :)
 
My mom has celiac... she loves WDW. Make the ADRs. Her favorite is 50sPT. Buffets can be a good bet too, they will tell her what she can and cannot have. Ohana prepares a special dish too.
