Merely owning property in Florida and paying property taxes for it does not establish Florida residency. That is true regardless of the property owned, DVC or otherwise. To establish Florida residency, you need to establish that Florida is your domicile, i.e., your principal place of residence. In section 12.14 of the Declarations for your resort, you will find a paragraph that declares you cannot use any time spent at the DVC resorts to establish Florida as your domicile.

Disney is currently selling a 3-day park pass for $139 to Florida residents and another $20 to add a fourth day. Usable through June 9. Good for one park per day and no requirement of consecutive days, but it blocks out Animal Kingdom May 27-June 9 (possibly an indication Avatar land may be opening then):
