Excursions for Eastern Caribbean

We are leaving on an Eastern Caribbean cruise January 10th on the Fantasy. I am traveling with my boys (ages 10 and 7). They would like to do the dolphin encounter and surfing lessons. I was wondering if anyone had tried these and had any feedback.
