Sunday Crockpot buffalo chicken - Will shred and use for salads/sandwiches
Monday Grilled chicken/shrimp, potatoes, broccoli
Tuesday Steak salads
Wednesday Orange chicken, stir fry veggies.
Thursday Leftovers
Friday N/A

Tonight's dinner is bubble up enchilada casserole.. From emilybites.com! Was super easy!
 
Tuesday I worked late again so we ate leftovers.

Last night we had steaks with hash brown patties and salad.

Tonight is pork chops with German potato salad and green beans
 
Have been pleased to see that even DH has been on the "using leftovers" bandwagon lately. Hate throwing away food, but I plan leftover nights much more often than he does for his cooking nights (has to do with our work schedules which night who cooks). We had leftovers Tues, and I made a cquiche and potatoes last night. Tonight DH is cooking, so I have to figure out what Friday will be: pita pizza, pasta, steaks or soup and sandwiches are my easy options at the moment.

dinner: chicken and pineapple quesadillas, chips and salsa

Saturday:
lunch: leftovers or sandwich
dinner: quesadillas again

Sunday:
lunch: again, leftovers or sandwich, maybe some spaghetti or something
dinner: one pan chicken

So I need to have some easy stuff in the house for the random days...buying bread, I have peanut butter, and the SO is happy with stuff like hotdogs if we don't have leftovers, so I think this will be good for the week. Have to be good about eating at home so I can go out on Thursday!
 


Short cooking week! Flying home to prep the house for our move home.

Tuesday- grab salads at Togos after we drop the dogs off at the kennel.

Wednesday we will be home until the following Tuesday morning!
 
Last night we got pizza out.

We are in this week. Ate lunch out twice this weekend, so it's time to get back on the wagon!

Wednesday - pasta/ spaghetti squash with roasted veg sauce
Thursday - something with tofu (it needs to be used up)
Friday - likely leftovers/ clean out the fridge night
 
No real menu this week. We're still at the beach and I leave for Nashville and Maryland early Wednesday.

I'll be eating frugally and healthily enough for both of us while visiting my brother, the organic, vegetarian locavore. ;)

HAHA! I know. It's not like I don't have even pre-made healthy things in the freezer, but even a sandwich seems like too much for dh to muster most of the time, lol. <shrug> It's his deal, right?

Friday--I'll be at a swim meet so whatever they serve at hospitality, probably pizza
Saturday--I dont know yet.

I used to make and freeze meals when I went out of town but they were always still in the freezer when I got home. I think he enjoys a vacation from the regular stuff :)

Tuesday -Sausage and peppers over rice

Wednesday - Beef stir fry

Thursday - Meatloaf, mashed potatoes, green beans

Friday - Chicken noodle soup
 
So, I got really ill last weekend and am ALL thrown off of my plans for the month. Really need to get back into it since next week starts the busiest time at work for me. Thus I have had to make a couple changes. So here is the list as it stands for the next week.

Tonight: Eggs and toast (I forgot to take anything out of the freezer lol)
Tomorrow: Stuffed peppers
Sunday: Leftovers
Monday: Slow cooker pulled beef sandwiches and fries
Tuesday: Leftovers
Wednesday: Shredded beef tacos
Thursday: Leftovers
Friday: Teriyaki salmon, rice, and roasted asparagus
Saturday: Slow cooker beef stroganof, egg noodles, broccoli
 
Sunday ~ Eggplant Parm

Monday ~ Spanish rice and a bit of leftover eggplant.

Tuesday ~ Green Beans and Beer Battered fish

Wednesday ~ Moroccan Spiced Chicken with Rice

Thursday ~ Eggplant Parm leftovers

Friday ~ Mushroom Raviolis

Saturday ~ Salad
 
I need to amend DH's eat-at-home menu. He smoked a pork roast yesterday so from Saturday forward:
Pulled pork
Sports bar food
Pulled pork
Pulled pork

What can I say, the man knows what he likes ;)
 
Haven't really kept a menu in quite awhile, but we're trying to get focused and eat at home and have a plan in place!

Sunday: chili, cornbread and cookies for dessert

Monday: crockpot ham, mac and cheese, corn

Tuesday: teriyaki chicken, brown rice, broccoli with cheese

Wednesday: homemade pizza

Thursday: baked chicken parm with spaghetti

That's all I have at this point. But it's a plan and by golly we're sticking to it!!
